HONEY
There are many hives in this area that give dark honey, heather honey. Each village has at least, one apiary and, in some cases, there are itinerant companies that leave their hives during the whole year. You can buy honey either in specialised shops or in plenty of fairs and markets in the region of Palencia.
SOCORRITOS OF CERVERA
Puff pastry. Nowadays they are produced in oval shape and covered with chocolate by the factory UKO in Cervera de Pisuerga.
TROUTS
You can obtain the best trouts of the province in the Carrion River System, from the reservoir of Camporredondo to Saldaña.
ROE DEER AND WILD BOAR
This bushmeat is abundant in this area. In the hunting periods, finding its stews in the restaurants of the mountains of Palencia isn't uncommon.
OREJUELAS
They use to eat them in Carnival and they are fried masses, similar to the `churros´, and dusted with sugar. Delicious.
